Questions

Which output should I pick?

GPX for maps, TCX for a few training apps, JSON to inspect the session, CSV to graph it in a spreadsheet.

Are laps in the GPX?

The track and sensors are. Device settings and some manufacturer-only FIT fields are not.

Is this the same as FIT to GPX?

The GPX path is the same conversion. This page adds TCX, JSON and CSV on one screen.
